Bulgur Pilaf with Dry Vegetables ingredients:
- four cups pilaf bulgur
- three cup chickpeas should be pre-boiled
- ten shallots
- six pieces of dry pepper
- six dry eggplants
- six dried tomatoes
- three cloves of garlic
- two tablespoons of tomato paste
- eight cups of water
- one spoonful of dried mint
- a teaspoon of black pepper
- a teaspoon of salt
- two tablespoons oil
Bulgur Pilaf with Dry Vegetables Making:
To prepare the rice, first soften it by pouring warm water over all the dried vegetables. Add oil to a saucepan.
Then chop the shallots in a good shape and sauté and add the paste. Add the washed bulgur on the onions which are roasted with tomato paste.
In the same way, continue to roast bulgur. Add the boiled chickpeas and spices on the bulgur.
Cut the softened dry vegetables into the roasted bulgur. Finally add the water and close the lid.
Cook the rice in low setting by reducing the bottom of the stove. You can serve the cooked rice after resting.
